In practical use, the science skill determines what resources, if any, you will receive from disassembling weapons. Lower level weapons (9mm Mauser, BB Gun) yield sometimes Junk, and often nothing. Upper tier weapons, however, can return Metal Parts and even Alloys.
Use Science on an item to disassemble it. You can't disassemble a weapon during a fight.
