Professions are needed to craft a certain type of items. There are 3 levels in each profession, each can be acquired talking to the right NPC, if you meet the skills requirements. An Armorer with level 3 profession will be able to craft more armors than an Armorer level 2 or level 1.

You can only have 3 profession levels in total, which means you can be Doctor 3 or Energy Expert 2 and Armorer 1, for example.

For now, you can't "forget" a profession level. Once you are Armorer level 1, you'll stay it forever.
